Loch Insh Outdoor Centre is an award winning holiday destination in the Cairngorms National Park and we are looking for an
experienced and confident individual with a love of the outdoors to head up our Sales and Marketing division.
The Centre is set in 15 acres of mature woodland on the shores of Loch Insh, and encompasses a 20 room main lodge, 13 chalets,
two apartments, a restaurant, events venue and a thriving watersports & ski sports activity centre which can be viewed at
The position we are recruiting for is office based and the successful candidate will be leading a team of between 4 and 6 persons
depending on the season, managing all aspects of our sales functions across this diverse business.
PRINCIPAL PURPOSE:
● To support and deputise for the Head of Catering in running the Restaurant Front of House, leading by example, providing
excellent customer service and ensuring the department's compliance at all times with relevant national legislation.
● To ensure all staff working in the Restaurant Department adhere to and follow relevant department specific training in
relation to food hygiene and preparation certification, Public Bar Operators licence, and any Risk Assessments associated with
insurance requirements.
● To understand, contribute to and lead the delivery of different business models with differing price points and service models
for the sale and delivery of different products from our grab and go self service bar, school canteen service, to table service
daytime cafe, to evening a la carte, to large events, whilst ensuring a Restaurant Department interpretation of the themes of
Inspire, Nurture, Master, Sustain promoted within each business model.
● To organise and manage an efficient staffing rota ensuring appropriately qualified/certified personnel are rota'd to key roles,
whilst managing staffing numbers so as to remain profitable and within the Pay to Sales spending metrics as set in the budget.
● To action company policy demonstrating attention to detail regarding cashing up at end of shifts/day.
● Auditing Inventory levels to ensure product availability and ordering as necessary.
● To embed the Vision of Inspire, Nurture, Master, Sustain into the operations, product offerings and service of the Restaurant
Department.
● To induct new employees and train more junior Restaurant Team members in the working systems and culture of the
Restaurant Department and to make immediate interventions regarding poor performances of team members and record all
instances of such poor performance for the purpose of appraisals or disciplinary action.
PERSONAL SPECIFICATION
● A minimum of 4 years prior experience in a customer facing role in a diverse tourism business,
● Experience in a management role of at least a couple of staff at two or three employers
● Basic experience of bookkeeping and accounts KPI's,
● Highly accountable and attention to detail in cashing up and stock tacking,
● Strong numeracy, analytical and literacy skills,
● Strong computer literacy and competence in the use of Microsoft Excel and Word, as well as Google applications,
● Excellent customer service and communication skills,
● Empathy and alignment to the values and culture of the company.
DESIRABLE
● Experience in a lead management role of a restaurant team delivering across a variety of service models,
● Proven ability to lead and manage staff.
● Experience of staff management and development.
● Experience of developing and monitoring programmes of staff development..
