Your responsibilities as Head Butcher
Lead the day-to-day running of the butchery department
Carry out and oversee full carcass breakdown across beef, lamb, and pork
Manage production levels to meet wholesale and hospitality demand
Maintain high standards of quality, consistency, and presentation
Oversee stock control, waste reduction, and yield optimisation
Manage food safety compliance, HACCP procedures, and external audits
What we’re looking for in a Head Butcher
Previous senior-level butchery experience within production or wholesale environments
Strong knowledge of full carcass preparation across multiple species
Background managing compliance, hygiene, and food safety standards
Experience overseeing production planning and operational performance
Ability to train and develop butchery teams effectively
Hours: 6:00am – 3:00pm, 5 days out of 7.
