PRS is proud to be partnering with a world-renowned luxury hospitality brand to recruit a highly skilled Senior Chef de Partie – Sushi for an exciting new restaurant opening in Central London.
This flagship venue is being developed with a clear ambition to achieve Michelin star recognition, offering a unique opportunity for a sushi specialist to play a key role within an elite culinary team from launch.
The Role
* Lead and manage the sushi section, delivering refined, high-quality sushi in a fast-paced, high-volume environment
* Prepare and present sushi to the highest standards, with exceptional attention to detail and consistency
* Work closely with senior chefs to develop and maintain a menu aligned with Michelin-level expectations
* Ensure precision in knife skills, fish preparation, rice preparation, and overall execution
* Contribute to a disciplined, ambitious kitchen culture focused on excellence
The Ideal Candidate
* Currently working as a Senior Chef de Partie or strong Chef de Partie specialising in sushi within a high-end Japanese restaurant
* Experience within top-tier London dining establishments, ideally with Michelin exposure
* Exceptional knowledge of sushi techniques, including fish preparation, rice seasoning, and presentation
* Strong understanding of premium ingredients and traditional Japanese methods
* A passion for excellence and desire to be part of a Michelin-driven kitchen
* Ability to perform under pressure in a high-volume, quality-focused environment
* Must have full right to work in the UK (no sponsorship available)
What’s on Offer
* £45,000 basic salary + tips (OTE £48,600)
* 45 hours per week
* 5 days on, 2 days off
