Head Chef – 3-Day Week, 30+hours
Fig & Feta is Eastbourne's vibrant Mediterranean bistro, set in the heart of beautiful Gildredge Park. By day, our café is known for freshly baked focaccia, homemade cakes, and relaxed brunches. By night, we open as Fig & Feta — serving seasonal, Mediterranean-inspired plates Friday and Saturday evenings. Our goal is simple: delicious food, beautifully presented, shared in good company.
The Role
We're looking for a Head Chef (3 days per week) to lead our kitchen, working alongside our existing team. This role is perfect for someone who is:
* Confident in leading a small kitchen with limited space.
* Skilled in prepping and cooking fresh, seasonal dishes that are flavoursome and beautifully presented.
* Excited to help evolve our dining concept for Eastbourne.
You'll be responsible for
* Designing, preparing and delivering our weekly menus
* Overseeing kitchen organisation, food prep, and service standards.
* Maintaining the highest standards of food hygiene and safety.
* Working collaboratively with the café and bistro teams to ensure smooth, enjoyable service.

* Availability to work Thursdays (approx. 11–7), Fridays (12–12), and Saturdays (2–12).
