Job Summary:
ITS THECHA, in partnership with Crowne Plaza Kingston Upon Thames and Ravens Ait Events Space, is seeking a passionate and skilled Sous Chef with a strong background in fine dining, banqueting, and 5-star hotel kitchens.
The ideal candidate must possess deep expertise in Indian cuisine and the ability to manage high-quality food production for à la carte, banqueting, and large-scale corporate events. This role requires leadership, creativity, and operational discipline to ensure the seamless execution of premium culinary experiences.
Key Responsibilities:
* Support the Executive Chef in managing day-to-day kitchen operations across both venues.
* Supervise, train, and mentor chefs and kitchen staff to maintain consistent quality and presentation.
* Oversee preparation and service for Indian à la carte menus, banqueting, and event catering.
* Assist in designing corporate catering and DDR (Day Delegate Rate) packages for business and event clients.
* Ensure compliance with HACCP, food safety, and hotel hygiene standards at all times.
* Maintain accurate records of inventory, food cost, and waste control.
* Manage kitchen operations during the Executive Chef's absence.
* Collaborate with the Events, F&B, and Sales teams to execute weddings, conferences, and bespoke dining events.
* Contribute creative ideas to menu development and special promotions.
Requirements:
* Minimum 6–8 years of professional culinary experience, including at least 2 years in a Sous Chef or Senior CDP role.
* Strong expertise in Indian cuisine; knowledge of multi-cuisine or contemporary menus is a plus.
* Proven experience in fine dining, banqueting, or event catering within 4–5-star hotel environments.
* Excellent leadership, time management, and communication skills.
* Strong knowledge of kitchen operations, costing, and stock management.
* Culinary degree or recognized professional qualification preferred.
