This roles aim is to manage the back of house food-led catering operation of Sunderland Greyhound Stadia. You as the Sous Chef will organize and supervise all kitchen and snack bar operations across your site, maintaining high food quality and complying with hygiene regulations. Controlling costs in general and maintaining good staff relations as well as maintaining all legal and company health, safety & HACCP standards, with the support of the Head of Catering. The remit will encompass all food preparation across your site.
Responsibilities for the successful Sous Chef include (but not limited to):
Support the Head of Catering in managing budgets, cost targets, and financial performance.
Order food and supplies within budget to meet GP and spend targets.
Manage the Indicator platform: stock takes, reporting, allergens, and menu planning.
Ensure compliance with Food Safety Management Systems and Health & Safety policies.
minimise waste.
Coordinate stock takes, order supplies, and manage site food prep and service.
oversee kitchen cleanliness and hygiene.
Train and guide kitchen staff on food safety and H&S procedures.
Maintain quality control from prep to plating.
The person we are looking for as a Sous Chef has....
Level 4 Food Management in food Safety preferred, Level 3 minimum.
Level 3 HACCP (Desirable)
Experience as a Chef de Partie in high quality, fast paced operation
