Nestled in the heart of London’s West End, you’ll find The Palomar.
Known for its open kitchen, electric atmosphere and deeply personal approach to hospitality, The Palomar has long been celebrated as one of the capital’s most exciting places to dine.
We are now looking for an exceptional Assistant General Manager to join the leadership team at The Palomar. This is an exciting opportunity for a driven and ambitious hospitality leader looking to take the next step in their career within one of London’s most dynamic restaurant groups.
Our intimate space is bursting with the vibrant colours, flavours, sounds and aromas of the rich cultures of Southern Spain and Italy, North Africa and the Levant. Whether in the midst of the action sat up at our kitchen counter, back in the elegant dining room or spilling out onto our street terrace, the atmosphere here remains at the forefront of our city’s dining scene.
As Assistant General Manager, you will play a central role in the daily life of the restaurant: supporting the General Manager in leading the team, driving standards and helping deliver warm, memorable hospitality at every service.
The role
This is a hands-on leadership role, ideal for someone who thrives in a busy, quality-led environment and takes genuine pride in both guest experience and team development.
You will be:
* A confident and inspiring leader who leads from the front, setting the tone for service, culture and professionalism across the floor.
* A natural host with a genuine passion for hospitality, comfortable building relationships with guests and creating a welcoming, energetic atmosphere.
* Highly organised and proactive, able to support the smooth day-to-day running of a fast-paced restaurant while maintaining exceptional attention to detail.
* Commercially aware, with a strong understanding of labour, stock, service standards and operational efficiency.
* Committed to developing people, supporting onboarding, training and performance management alongside the General Manager and People Team.
* Experienced in high-quality, high-volume hospitality environments, with the ambition to continue growing into senior leadership.
You will work closely with the General Manager and Group leadership team to:
* Maintain and continually improve standards of service and guest experience.
* Ensure statutory compliance across all areas of the business, including health & safety, licensing and food safety.
* Support labour management, rota planning and cost control in line with business targets.
* Help drive a positive, inclusive and accountable team culture.
* Anticipate operational challenges and proactively contribute to solutions.
What we offer:
* Excellent opportunities for progression and development. Many of our teams move around the Studio Paskin group as they grow through their career with us. The Palomar General Manager was recently promoted from AGM – having started their journey with us as Head Waiter!
* Paid development courses, including WSET, Watershed and more
* Up to £2,000 employee referral bonus
* Generous staff discount of up to 50% across all Studio Paskin venues
* Cost-price wine and supplier discounts
* Enhanced parental leave package
* Partnership with Kelly’s Cause and automatic enrolment in Hospitality Action’s Employee Assistance Programme, including counselling, GP and physio services, and legal advice
