An exceptional opportunity has arisen for an experienced Head Chef to lead the culinary operation at one of the Midlands’ most prestigious luxury country house spa hotels.
Set within a historic estate, the hotel is home to two award-winning restaurants — a 3 AA Rosette fine dining restaurant and a 2 AA Rosette brasserie — alongside a thriving weddings and events operation. The successful candidate will take overall responsibility for the kitchens across the estate, leading an established brigade and driving standards across all areas of the food offering.
This is a senior leadership role suited to a chef with the experience, authority and vision to manage a large multi-outlet operation while maintaining the quality and consistency expected at Rosette level.

2 AA Rosette Brasserie
A sophisticated, contemporary dining space offering a more relaxed but still quality-driven experience.
Events & Banqueting
A major part of the business, with large-scale weddings and private events hosted in a purpose-built Orangery and across the wider estate.
You will oversee a brigade of approximately 12 chefs, supported by an Executive Pastry Chef and an experienced senior team.

The Role
* Leading the full culinary operation across the hotel’s kitchens
* Maintaining the standards required for 3 AA Rosette dining
* Managing and developing a brigade of around 12 chefs
* Overseeing menu development across restaurants, events and hotel dining
* Ensuring strong operational structure, organisation and kitchen culture
* Managing food costs, supplier relationships and kitchen systems
* Delivering high-quality food across restaurant service, weddings and banqueting
This role requires a chef comfortable balancing fine dining precision with the demands of a large luxury hotel operation.

Candidate Profile
* Proven experience as a Head Chef or Executive Sous Chef within a luxury hotel or multi-outlet operation
* Background within 3 AA Rosette or Michelin Guide kitchens
* Strong leadership experience managing larger brigades
* Excellent organisational and commercial awareness
* Passion for seasonal produce and modern British cuisine
* Ability to lead from the front while building a strong and professional kitchen culture
