Overview : This role focuses on leading the butchery team to meet production targets while ensuring adherence to strict quality, safety, and operational standards. The ideal candidate will drive performance improvements in areas such as product quality, yield, cost control, traceability, and compliance with health and safety regulations.

Food Safety & Quality Control:
Ensure all food safety protocols are adhered to, maintaining the highest standards of product safety, authenticity, and integrity.
Oversee labelling, product traceability, and compliance with hygiene legislation.
Operational Performance:
Monitor yield, waste, and labour performance, identifying areas for improvement.
Resource Management:
Manage team rotation, holiday and absence planning, ensuring minimal disruption to production targets.
Oversee training and development of team members, maintaining a skills matrix and planning for succession.
Support and motivate the team to ensure continuous performance improvement.
Track and report on key performance indicators (KPIs) related to yield, labour, and waste.
Strong leadership and team management skills, with a focus on motivating and developing team members.
Excellent communication skills, with the ability to speak, write, and understand English fluently (essential for health, safety, and traceability purposes).
Accreditation in Food Hygiene (Level 3) and HACCP certification.
Flexible and adaptable with a positive attitude towards continuous improvement.
