With full accountability for ensuring the day-to-day smooth running of the Kitchen, the successful candidate willensure the department delivers guest satisfaction through exceptional food quality whilst meeting the hotel's profitability margins.
The Role
* Overseeing preparation and timely delivery of food for all outlets and services including breakfast, afternoon tea, bars, meetings & events, room service
* Leadership of the Kitchen team, including coaching and training colleagues in food production
* Creating and updating departmental Standard Operating Procedures and Policies
* Management, development and costing of menus
* Manage the review, selection, determination of specifications and pricing of proposed menus
* New recipe development and product testing
* Deliver consistent food standards and quality across all areas
* Monitor guest satisfaction and develop strategies to improve food quality
* Achieve food budget cost of sales, ensuring minimum wastage
* Ensure Kitchen complies with all current Health and Safety legislation and Food Hygiene legislation
The Person
The ideal candidate will have an extensive food knowledge, and have a flair for culinary technique and creative menu development. In addition to a minimum of 2 years' in a similar role, the successful candidate will have experience in a busy hotel kitchen environment.
