Mount Royal Hotel Edinburgh by the Unlimited Collection is looking for a passionate and dynamic individual with a flair for leadership and a commitment to exceptional service to join our team as a Breakfast Manager .
The Breakfast Manager will be responsible to:
Take responsibility for the daily breakfast operations of both Front of House and Kitchen teams, ensuring smooth and efficient service
Assist the Food and Beverage Manager in developing and implementing the business plan, identifying commercial opportunities to maximise revenue and deliver against budget targets
Lead by example in delivering a memorable breakfast experience that exceeds guest expectations
Ensure compliance with all health and safety regulations while maintaining a clean, safe, and welcoming environment
Support in the recruitment, training, and coaching of new team members across FOH and BOH, fostering a positive, service-led culture
Oversee the planning and delivery of rotas to meet business needs while maintaining excellent service standards
Monitor food quality and presentation, ensuring consistency with the hotels high standards
Maintain effective stock control, oversee breakfast pricing in the catering software system, and ensure all financial procedures are followed accurately
Assist the Food and Beverage Manager in the analysis and use of financial data to drive optimum performance
Liaise with suppliers and clients, sourcing locally where possible and promoting sustainability and quality
A successful Breakfast Manager will have:
Previous hospitality experience at managerial level
Previous 4-star hotel restaurant experience
Previous experience in a Rosette environment is preferred but not essential
Customer-focused approach with excellent customer service skills
Previous experience of handling customer complaints and guest requests professionally
Excellent team-leading skills with the ability to motivate and inspire
Ability to communicate clearly and concisely with guests and colleagues
Excellent organisational skills with the ability to multi-task and troubleshoot under pressure
A well-organised, outgoing, and service-minded personality
Confident and courteous manner
The ability to coach, lead and motivate a team to deliver first-class service
Strong organisation and planning skills, with the ability to manage multiple priorities
A good command of English is essential; a second language is advantageous
A positive, proactive approach to delivering service excellence and driving commercial success
