Nuwairah's is a bold Japanese × Mexican fusion restaurant and cocktail bar in Harlow, focused on premium dining, strong atmosphere, and elevated presentation.
We are repositioning the brand and looking for a Head Chef who can lead this transformation.
This is not a standard kitchen role.
We are looking for a chef who understands precision, plating, food cost control, and modern fusion creativity.
Responsibilities:
* Lead and manage kitchen operations
* Maintain premium plating and consistency
* Develop and refine Japanese × Mexican fusion dishes
* Control GP% and reduce waste
* Train and structure kitchen team
* Maintain high hygiene and professional standards
* Work closely with management to elevate the brand
Required Experience:
* Strong background in premium dining or modern restaurant concepts
* Confident with sushi OR high-quality hot section
* Knowledge of Japanese techniques and modern plating
* Experience managing kitchen teams
* Strong food cost and portion control understanding
* Calm under pressure
Bonus if you have:
* Experience with fusion concepts
* Open kitchen or premium service experience
* Menu development experience

You must be confident in:

* Working clean and fast
* Maintaining high standards
* Following systems and structure
