Designed with theatrical flair, the steakhouse centres around an open kitchen and features a custom dry-aged fridge that proudly displays premium cuts as both spectacle and statement of quality. About the Role:
We are seeking an experienced and visionary Head Chef to help spearhead the pre-opening and ongoing culinary operations at our new steakhouse concept. This is a rare opportunity to be part of a high-profile venue from the ground up.
Reporting to the Executive Chef, you will work in close collaboration to shape the menu, lead the kitchen design and setup, recruit and train your team, and set the tone for a refined, produce-driven dining experience.
This concept celebrates premium cuts, bold flavours, expert technique, and a sense of theatre! All delivered with consistency, confidence, and a strong operational backbone.
Key Responsibilities:
Pre-Opening Phase
Collaborate on menu design and development with the executive chef, showcasing premium steak cuts, seasonal produce, and elevated sides
Recruit, onboard, and train a high-performing kitchen team aligned with venue vision and standards
Collaborate with the Venue Manager, design team, and suppliers on kitchen fit-out and equipment setup
Establish all BOH procedures including prep guides, par levels, cleaning schedules, and HACCP plans
Participate in soft-openings, tastings, and launch events with key stakeholders and guests
Ongoing Operations
Support the Executive Chef in overseeing day-to-day kitchen operations, ensuring consistency in quality, efficient service, and team performance
Take a hands-on role in leading and mentoring the kitchen team, fostering a collaborative and high-performance culture
Assist with managing supplier relationships, stock ordering, inventory, and food cost control in line with group standards
Ensure all hygiene, food safety, and OH&S regulations are followed, maintaining compliance and upholding brand expectations
Contribute to ongoing menu development, bringing fresh ideas that align with the Executive Chef’s vision and brand direction
Work closely with the FOH team to support seamless service flow and outstanding guest experiences
Monitor kitchen KPIs and support budget management and profitability targets in coordination with the Executive Chef
Act as a reliable second-in-command, stepping up confidently when required and ensuring smooth kitchen operations at all times
About You:
Minimum 3 years’ experience as a Head Chef or Senior Sous Chef in a premium dining environment/steakhouse
Strong background in grill, butchery, or modern Australian cuisine highly regarded
Proven leadership skills with a passion for mentoring and developing talent
Sound understanding of kitchen financials and cost management
Exceptional planning and organisational skills (pre-opening experience is a plus)
Flexibility to work evenings, weekends, and public holidays
