About The Old Mill Hotel: Nestled by the picturesque River Nadder with stunning views of Salisbury Cathedral, The Old Mill Hotel is a charming and historic hotel offering a unique dining experience and comfortable accommodation. We're looking for a talented and passionate Sous Chef to join our dedicated culinary team and help us continue to elevate our food offering.

The Role: We're seeking an experienced and creative Sous Chef to support our Head Chef in the daily operations of our busy kitchen. As Sous Chef, you'll be a vital part of our culinary leadership, playing a key role in menu development, kitchen management, and ensuring the highest standards of food quality and hygiene. This is an excellent opportunity for a skilled chef looking to take the next step in their career, contribute to a thriving establishment, and work with a committed team.

Key Responsibilities:

* Assist the Head Chef in all aspects of kitchen management, including menu planning, food preparation, and cooking.
* Lead and motivate the kitchen team in the Head Chef's absence, ensuring smooth and efficient service.
* Maintain high standards of food quality, presentation, and consistency.
* Oversee inventory, stock rotation, and ordering to minimise waste and control costs.
* Ensure strict adherence to all food safety, hygiene, and health and safety regulations.
* Contribute to the training and development of junior kitchen staff.
* Manage kitchen stations, ensuring efficient workflow and timely delivery of dishes.
* Help manage kitchen budgets and achieve financial targets.
* Foster a positive and collaborative working environment.

What We're Looking For:

* Proven experience as a Sous Chef or a strong Chef de Partie ready for progression in a fast-paced environment, preferably within a hotel or quality restaurant.
* A strong passion for food and culinary excellence, with a creative approach to cooking.
* Excellent knowledge of various cooking methods, ingredients, and equipment.
* Solid understanding of food safety and hygiene regulations (e.g., HACCP).
* Strong leadership, communication, and organisational skills.
* Ability to work effectively under pressure and manage multiple tasks.
* Flexibility to work evenings, weekends, and holidays as required by the business.
* Relevant culinary qualifications are a plus.
