To provide and carry out catering services within HMP Doncaster in accordance with all relevant and current regulations, legislation, and guidelines.
Main Accountabilities:
1. Work with the Catering Manager and team to deliver catering services across the establishment, ensuring compliance with all Health & Safety and Food Safety Regulations, legislation, and company policies.
2. Organise, supervise, and provide varied, healthy meals for prisoners, including special diets, events, and religious occasions, staying updated on industry trends.
3. Deputise for the Head Chef/Team Leader when needed and lead catering operations.
4. Ensure maintenance checks of equipment are completed, report defects to Facilities Management and the Catering Manager.
5. Provide meals outside normal hours if prisoners miss their scheduled meal without fault.
6. Maintain security and safety of food during delivery, storage, and service.
7. Record and document all relevant paperwork to comply with food hygiene, Health & Safety, HACCP, and company policies.
8. Provide training and supervision to kitchen staff and prisoners involved in food production or service.
9. Conduct quality checks at food service points before, during, and after mealtimes.
10. Address complaints and trends collaboratively with the catering team.
11. Work shifts and weekends as required.
12. Assist with prisoner movements and searches related to kitchen activities.
13. Perform any other reasonable duties within the scope of the role.
Requirements for the Role:
* Strong commitment to prisoner rehabilitation.
* Experience working in a diverse, people-centered environment with a good team ethic.
* Minimum 3 years' experience in a large catering operation, preferably in a custodial setting.
* Supervisory skills with excellent interpersonal, communication, and written skills.
* Basic computer skills (Excel, Word, Outlook).
* Resilience, conflict resolution, de-escalation, and risk management skills.
* Assertive, creative, and problem-solving abilities.
Essential Qualifications:
* Literacy and Numeracy Level 2 or equivalent GCSE.
* Level 2 Food Safety
* Level 2 HACCP
* Awareness of Allergen Control in Catering
* Level 2 First Aid at Work
* Qualifications in Food Safety & HACCP, Allergens, and First Aid to be completed during probation.
* City & Guilds / NVQ Level 2 in Food Preparation and Production or equivalent.
