WHO WE ARE LOOKING FOR This is a leadership role, critical to the continued success of the retail culinary department. It will require a seasoned Chef with the expertise and tenacity to match the size of the venue and our ambition. The successful candidate will need to be confident and experienced enough to support in delivering the culinary operation that serves over 30,000 fans per match day, focusing on high quality products. Can meaningfully engage with and stakeholders at all levels; whether direct reports, peers, keys suppliers or VIP guests, with the ability to speak coherently and articulate their thoughts and opinions to instil confidence and reassurance with every interaction. A FLAVOUR OF THE DAY TO DAY Reporting to The Retail Head Chef, The Deputy Head Chef of Retail will. Support the Head Chef in crafting specials, forecasting new menus, and preparing detailed spec sheets to ensure innovation and consistency. Contribute creative ideas and new pathways to elevate the retail culinary production. Build and oversee production schedules, ensuring menus and dispatch sheets are followed with precision. Maintain accurate stock records, support stocktakes and drive cost-effective ordering processes aligned with budgetary constraints. Help to oversee and maintain all aspects of food production, ensuring the highest standards of quality, consistency, and presentation. To monitor and manage waste and bring new ideas to ensure that the department is constantly aligning with the department’s environmental goals. Ensure the highest standards of cleanliness and safety are maintained throughout the production and distribution areas. Monitoring compliance with food safety guidelines during deliveries, preparation, and storage. Work with the Head Chef Retail to maintain strong control over department’s expenditure, ensuring all costs are accurately forecasted and recorded within the business’ weekly returns sheet. Liaise with the Safety & Compliance to regularly assess that team members are educated in, and fully understand, the safe working practices in line with all health, safety and food safety legislation. TECHNICAL SKILLS AND QUALIFICATIONS Computer literate with particular proficiency with Microsoft Office (Word, Excel, PowerPoint) Confident utilising intuitive cloud-based software for procurement and staff scheduling (E.g.
