This role requires a deep understanding of authentic regional products, quality standards, and supplier management to ensure consistency, cost control, and alignment with culinary objectives. Key Responsibilities: Deep understanding of Indian and Italian ingredients, their sources, and quality standards. Ensure authenticity and quality of specialty products such as Parmigiano Reggiano DOP, San Marzano tomatoes, Basmati rice (GI-certified), cold-pressed oils, cured meats, and spice blends. Familiarity with spice blends, cured meats, specialty cheeses, pastas, and oils. Evaluate ingredients based on appearance, aroma, freshness, and compliance with food safety standards. Stay updated on dietary trends, allergen information, and quality certifications relevant to both cuisines. Identify, evaluate, and onboard reliable vendors for all categories—spices, produce, meats, dairy, grains, and oils. Comprehensive knowledge of Indian and Italian ingredients, their origins, and seasonal availability. Awareness of dietary and allergen requirements common in Indian and Italian dishes Evaluate supplier performance on price, quality, reliability, and delivery timelines. Maintain a database of approved suppliers and alternative options for critical items. Negotiate contracts, payment terms, and bulk purchase agreements with vendors to optimize costs. Track purchase orders, deliveries, and invoices to align with budget and operational targets. Monitor market trends, exchange rates, and logistics factors influencing ingredient costs. Ensure all purchases comply with internal procurement policies and food safety standards. Monitor inventory levels to prevent overstocking or shortages. Implement an efficient inventory tracking system to ensure freshness and traceability. Ensure all purchased products meet restaurant standards for freshness, authenticity, and hygiene. Conduct regular audits of deliveries to verify product quality and adherence to specifications. Work closely with the culinary and quality control teams to resolve discrepancies or non-compliance issues. Communicate delivery schedules and shortages to kitchen and service teams. Qualifications & Experience: Good experience in the related field. Good experience in procurement, preferably in hospitality, fine dining, or food manufacturing. Knowledge of UK food supply chain, import/export, and food safety compliance. Collaborate with the Head Chef and Restaurant Manager to align purchasing with menu planning, promotions, and seasonal offerings. Proven expertise in Indian and Italian food sourcing and supplier management. Strong understanding of import/export procedures, quality certifications, and labeling requirements. Excellent negotiation, communication, and analytical skills. Proficiency in inventory management software and MS Office tools.
