Perched on the 10th floor of the new Montcalm Royal London House Hotel in Finsbury Square near Moorgate and Liverpool Street, Aviary is London's premier rooftop bar, restaurant and terrace. Famous for its breathtaking views and opulent style.
Join ETM Group as the Executive Chef overseeing our standout venues - the iconic rooftop restaurant Aviary, known for elevated modern British dining; the vibrant all-day café-bar Burdock, serving fresh, creative dishes from breakfast through late night; and the bold, beer-led Long Arm Brewery, offering hearty, comfort-driven favourites designed to pair perfectly with our craft brews. These venues showcase some of London's most exciting culinary spaces, each with its own personality and menu style, united by a commitment to exceptional quality, seasonality, and unforgettable flavour.
We are seeking a visionary Executive Chef to lead our dynamic kitchen brigade across all three outlets. This is a rare and exciting opportunity to shape the culinary direction of a flagship hospitality destination-crafting innovative menus, championing exceptional produce, and delivering unforgettable dining experiences across our diverse venues.
Key Requirements (but not limited to):
* Experience: Proven experience as an Executive Chef in high-end restaurants and hotels, with a strong track record operating multiple sites at a premium level.
* Culinary Passion: A deep passion for modern British cuisine with a creative, contemporary approach to presentation. Able to execute menus that highlight seasonality, creativity, and locally sourced ingredients.
* Leadership Skills: Exceptional leadership abilities with a strong focus on team development. Capable of recruiting, training, and mentoring a high-performing kitchen team while fostering a culture of excellence and continuous improvement.
* Operational Acumen: Expertise in overseeing all kitchen operations, including food cost control, waste reduction, inventory management, and supplier relations to ensure maximum efficiency and profitability.
* Quality Assurance: Commitment to maintaining the highest standards of food quality, presentation, and hygiene, ensuring full compliance with all health and safety regulations.
* Collaborative Approach: Ability to work closely with front-of-house management to coordinate events, respond proactively to guest feedback, and elevate the overall guest experience.
