About the Role
Join our kitchen team at the exclusive Grand Central Hotel, part of Hastings Hotels, a family‑owned luxury hotel group based in Northern Ireland.
Working under the Executive Head Chef, Damian Tumilty, you’ll help manage kitchen operations, maintain high food quality standards, and contribute to menu development and business initiatives.
Work 45 hours per week, 5 shifts out of 7, with typical patterns 12pm‑11pm or 2pm‑10pm.
Salary starts from £34,000 per annum.
Responsibilities
 * Assist the Executive Head Chef in managing smooth and efficient kitchen operations to maintain the hotel’s reputation for food quality.
 * Ensure the planning, preparation, cooking, and presentation of food meet the required standard.
 * Help create new and innovative menus.
 * Support business planning, projects, and initiatives to develop the hotel’s business and market position.
 * Manage culinary budget and kitchen expenditure.
 * Implement and monitor stock management and ordering policies.
 * Ensure compliance with food hygiene regulations, environmental health laws, and relevant legislation.
 * Maintain the hotel’s 5* hygiene score.
 * Ensure kitchen and storage area security.
 * Provide training, coaching, and development for kitchen staff.
 * Implement and review Hastings quality standards and procedures; deliver feedback for continual improvement.
 * Conduct regular team meetings to communicate standards, targets, and company information.
 * Maintain kitchen areas, fixtures, and equipment to Hastings standard.
 * Work effectively with cross‑department colleagues for a harmonious work environment.
 * Carry out any other duties as required.
Required Criteria
 * Good communication skills.
 * Clean and tidy appearance.
 * Excellent attention to detail.
 * Right to work in the United Kingdom.
 * Previous experience at a similar level in a high‑quality catering operation.
 * NVQ Level 2 (or equivalent) in Food Preparation and Cooking, and a recognised current Food Hygiene Certificate.
