This historic country house hotel, set in 14 acres includes fishing lakes, landscaped gardens, outdoor terraces, and adjacent woodland. Botleigh Grange was originally built as a private Country House during the 17th century. The property is in close proximity to the Hamble Sailing waters and 2.3 miles from the Ageas Bowl cricket grounds.
We are seeking a talented and driven
Food & Beverage Manager
to join our leadership team. This is a senior, hands-on role where you will take ownership of our entire F&B operation and inspire your team to deliver exceptional guest experiences every day.
The Role:

Overseeing the day-to-day operation of the restaurant, bar, lounge, and eventual room service

Leading the delivery of weddings, conferences, and large-scale banqueting functions
·
Ensuring excellent service standards across breakfast, lunch, dinner, and events
·
Driving efficiency and profitability while maintaining a premium guest experience
Responsibilities:
* Full accountability for the F&B budget, payroll planning, and cost controls.
* Monitor and manage food and beverage costs to maximise profitability.
* Develop, train, and mentor the F&B team, creating a culture of excellence and service.
* Work closely with the Head Chef to ensure innovative, seasonal menus that meet guest expectations and business goals.
* Oversee recruitment, training plans, and ongoing performance development for all team members.
* Forecast and manage resources to meet business demands while optimising labour costs.
* Implement and maintain high standards of health, safety, and compliance across all outlets.
* Drive revenue through creative initiatives, upselling, and exceptional event delivery.
About you:
* Proven experience as an F&B Manager (or senior deputy) in a hotel or events-led operation.
* Strong financial acumen with experience in budgets, payroll management, and food cost control.
* Skilled leader with the ability to inspire, train, and develop a team.
* Commercially aware with a proactive approach to maximising revenue opportunities.
* Excellent organisational skills with attention to detail in both service and back-of-house operations.
* Flexible and adaptable, with the ability to thrive during busy service and large functions.
