The Business
The Stables Bar and Restaurant is part of Grange Farm Park, a family-run luxury holiday park on the Lincolnshire coast, offering 5* accommodation and a warm, welcoming atmosphere.
The Stables is a 60-cover relaxed brasserie serving both holiday guests and the public, offering hearty breakfasts, tempting evening meals, and everything in between. Beyond the restaurant, our venue includes two beautiful tipis, a cosy potting shed, a stretch tent, BBQ hut, and canopy area – giving guests a variety of indoor and outdoor dining experiences.
We pride ourselves on quality, consistency, and creativity, with menus built on British favourites, comfort food classics, and locally sourced ingredients.
The Role
This is a unique hybrid position that combines culinary leadership with overall restaurant management. You'll not only lead the kitchen but also oversee the Front of House team, guest experience, and commercial performance, giving you the chance to put your stamp on the entire operation.
Key responsibilities include:
1. People & Leadership
* Lead, coach, and manage both FOH and BOH teams.
* Build structure, consistency, and a culture of pride and professionalism.
* Handle recruitment, onboarding, training, and performance management.
* Conduct regular 1:1s and foster a respectful, motivated workplace.
2. Service & Guest Experience
* Be present during peak service, running pass or floor as required.
* Maintain consistent quality, speed, and presentation across all areas.
* Shape the FOH team, setting service standards that match the kitchen's high performance.
* Ensure every guest enjoys a polished, warm, and memorable experience.
3. Kitchen & Culinary Excellence
* Lead menu development, pricing, and GP targets (65–70%).
* Deliver daily specials to minimise waste and keep menus exciting.
* Maintain 5-star food hygiene and allergen compliance.
* Manage stock, suppliers, and purchasing.
* Mentor and train kitchen staff, fostering creativity and discipline.
4. Commercial & Events
* Own P&L drivers including labour %, food cost %, wastage, and margins.
* Build and manage rotas for both FOH and BOH.
* Work with the Events Team to deliver weddings and functions, ensuring smooth execution from menus to service.
* Achieve KPIs: food/beverage GP, labour %, event margins, compliance standards.
5. Compliance & Safety
* Ensure full compliance with H&S, training records, and food safety.
* Maintain our EHO 5-star rating and zero critical non-conformances.
About You
We're looking for someone who is both a passionate chef and a natural leader. You'll thrive on variety, balancing the demands of the kitchen with the bigger picture of service and business performance.
Essential skills & attributes:
* Strong culinary background, ideally as a Head or Sous Chef.
* Creativity with food and the ability to deliver consistency under pressure.
* Experience managing P&L, GP margins, and cost controls.
* Knowledge of health, hygiene, and allergen regulations.
* Proven ability to lead, coach, and inspire teams.
* Excellent communication and problem-solving skills.
* Positive, guest-focused attitude with a drive to raise standards.
