About The Role

Lead Chef – The Vinery

We are looking for an inspirational, enthusiastic and experienced Lead Chef to join our culinary team. As Lead Chef you will support the Estate Chef in delivering exceptional food using locally sourced and seasonal ingredients, help shape menus and lead a team that shares a passion for preparing exciting, fresh and nutritious food daily. Your role will involve kitchen staff leadership, food ordering, stock control, menu planning, and ensuring consistent delivery of high‑quality hot and cold dishes, food compliance and safety. This fast‑paced, multi‑faceted environment offers a great work‑life balance.


Key Tasks And Responsibilities

* Assist in food preparation, ensuring it meets the highest standards set out on our menus.
* Lead and motivate food and beverage staff, maintaining high food hygiene, allergen awareness and safety standards.
* Contribute to menu development with creativity and seasonal awareness.
* Implement and maintain food monitoring procedures to facilitate budgetary control and monitor costs against agreed budgets.
* Monitor stock levels and place orders.
* Maintain a clean, organised and efficient kitchen environment.
* Ensure compliance with all food safety and health regulations.
* Prevent waste through forward‑thinking and efficient processes.
* Maintain quality control for all food items and address quality issues promptly.
* Support training and development, fostering a positive learning culture.
* Deliver outstanding customer service to create unforgettable visitor experiences and return patronage.

This list is not exhaustive; you may be required to perform other reasonable tasks as needed.


Requirements

* Proven experience as a Lead Chef or in a similar role (at least 3 years).
* Level 2 Food Hygiene certificate (minimum).
* Relevant health and safety qualifications and knowledge of COSHH.
* Strong leadership and communication skills.
* Passion for fresh, seasonal, locally sourced food.
* Excellent knowledge of food safety and hygiene standards.
* Ability to work under pressure and adapt to changing demands.
* Numerate and computer‑literate with an understanding of financial drivers.
* Clear understanding of profit margins, labour controls, purchasing policy, budgetary and food costing, including control.
* Flexible approach to duties undertaken.
* A kind and caring attitude toward colleagues and customers.
