Nonna Bakery is seeking a skilled and passionate Head Baker to lead the bakery production team at our first London location. Inspired by authentic Italian traditions, Nonna Bakery offers a vibrant, high-quality product range. The Head Baker will play a key role in launching and running the bakery’s production operations, ensuring excellence in product quality, team performance, and daily workflow. This is an exciting opportunity to shape the foundations of a growing artisanal bakery concept.
Key Responsibilities:
Store Launch & Setup
* Lead the setup and organization of the bakery production area.
* Ensure equipment readiness, workflow efficiency, and ingredient availability.
* Collaborate with the Bakery Manager and founders to coordinate suppliers and technical needs for a smooth opening.
Recipe Development & Quality Control
* Finalize and standardize recipes in collaboration with the founders.
* Ensure every product reflects Nonna Bakery’s signature taste, freshness, and style.
* Develop and implement SOPs (Standard Operating Procedures) for all baked goods.
Daily Production Management
* Plan and supervise daily baking schedules and production.
* Guarantee the consistent quality of baked goods, including croissants, focaccia, cannoli, maritozzi, and other Italian specialties.
* Maintain high standards of hygiene, organization, and equipment upkeep in the baking area.
Team Supervision & Training
* Hire, train, and lead the baking team.
* Provide regular training and feedback to ensure professional growth and performance.
* Foster a collaborative, respectful, and professional kitchen environment.
Inventory & Supply Management
* Monitor ingredient levels and baking supply inventory.
* Place orders and coordinate deliveries to ensure the availability of fresh, high-quality ingredients.
* Minimize waste and maintain cost-effective stock control.
Person Specification Summary:
The ideal candidate will have at least 3 years of experience as a Head or Senior Baker in a fast-paced bakery, with strong expertise in laminated doughs and traditional Italian baking. They should possess excellent leadership and training abilities, and be fluent in English. Experience with recipe development, a formal culinary or pastry education, previous involvement in store openings, and proficiency in Italian or Chinese are desirable assets.
