Overview
Primary Job Purpose: A Sous Chef is needed to join our busy kitchen. We are seeking a professional who is dedicated to food quality and sets high standards for output. The ideal candidate will have experience in a similar role, or be seeking the next step in their career (from Junior Sous or equivalent). A flexible approach to work and a positive can-do attitude are essential.
Responsibilities
* Provide excellent backup to the Head Chef and, in their absence, provide adequate supervisory backup using your own discretion.
* Undertake duties as set by the Head Chef or Management.
* Act as an integral part of the Kitchen Management team in the absence of the Senior Sous and Head Chef.
* Operate and participate in the efficient running of the kitchen; prepare, cook and present meals to the standards set by the Head Chef and Management.
* Ensure all foods served meet laid-down standards.
* Order food and related products to the correct standards and quantities for the level of business, in the absence of the Senior Sous and Head Chef.
* In the absence of the Senior Sous and Head Chef, be accountable for the running of the kitchen and for the preparation of all foods to agreed standards.
* Assist the Senior Sous and Head Chef in maintaining accuracy of all goods delivered.
* Be accountable for health and hygiene standards within the department to current legislation.
* Keep working areas clean and maintain a high standard of personal appearance and hygiene, including a clean uniform.
* Work on a rota basis as required and perform other duties in line with supervisory responsibilities.
* Report maintenance needs to appropriate staff.
* Follow all company policies and procedures outlined in the Employee Handbook, including cash handling and credit procedures where applicable.
* Follow all Health and Safety procedures.
* Be aware that the job description is not exhaustive; perform other reasonable tasks as specified by the manager.

Qualifications and Skills
* Demonstrable culinary experience in a similar role.
* Minimum NVQ Level 2 or equivalent in professional cookery (essential).
* NVQ Level 3 or equivalent in professional cookery (desirable).
* Knowledge of best practices for training kitchen staff and implementing kitchen procedures.
* High level of creativity; ambitious to learn, grow and develop.
* Passion for new ideas with the ability to inspire new team members.
* Great attention to detail with a high level of reliability.
* Flexible schedule; confident and approachable; able to work well as part of a team or on a sole basis.
* Ability to handle pressure calmly and professionally.
* Ability to work to deadlines with high standards of presentation, organisation and cleanliness.
* Excellent time management and communication skills; strong leadership abilities.

* NVQ Level 2 or equivalent in Professional Cookery; Level 3 Health & Safety Certificate; Level 2 Food Safety Certificate; up-to-date allergen training.
* Experience in a similar culinary role with in-depth knowledge of commercial kitchen routines and utensils; knowledge of maintaining culinary utensils.
* Familiarity with training kitchen staff and implementing procedures.
* Polite and friendly with a positive can-do attitude; helpful to guests requiring assistance; respectful, ambitious, with a passion for new ideas and knowledge of the hotel industry.
* Knowledge of Fourth Hospitality System; willingness to undertake further training.
* English GCSE grade 4/C or above; Maths GCSE grade 4/C or above.
