Are you ready to take your butchery skills to the next level? Due to our exciting growth, we’re looking for a passionate Butcher to join our talented in-house team at the Carver and Co Depot, part of Sysco GB in Wigan. Here, we pride ourselves on offering exclusive cuts of British and Irish beef, all expertly butchered, prepared, aged, stored, and packed on-site.
Your Role
As our new Butcher, you’ll be an integral part of a small, dedicated team, supporting a variety of tasks across our production operation. Here’s what you can expect:
* Prepare a range of meat products, including prime steak cuts, chops, and roast joints.
* Perform boning, cutting, and trimming to meet customer specifications.
* Maintain high standards of health and safety, food safety, and HACCP compliance.
* Assist in training our Butchery Operatives in basic meat trimming and preparation skills.
* Utilize machinery to prepare meat for customer orders, ensuring quality and consistency.
* Handle order picking, packing, labeling, and storing of meat products.
* Complete necessary documentation, including recording product temperatures and HACCP paperwork.
This role is active and requires you to be on your feet for extended periods in a chilled environment. You’ll also engage in manual handling, including bending and lifting to manage supplies and finished products.
What We’re Looking For
Ideally, you’ll be an experienced Butcher with the ability to trim and portion various whole primal joints. A track record of achieving correct portion control for high-end cuts, such as center cut fillet steaks, is essential. However, if you’re a chef with a keen interest in the food industry, we offer training in basic knife skills and the opportunity to specialize in butchery machinery.
