Overview:
We are seeking a talented and experienced Executive Chef / Food Technologist to lead our team of artisan confectioners at The Naked Marshmallow Co. based in Lincoln.
This role requires a strong understanding of regulatory requirements, HACCP principles, and food production processes.
We are a proud independent home grown British brand specialising in handcrafted gourmet marshmallows and premium chocolate products. Since the inception of the brand more than 10 years ago, we have built a strong reputation for quality, creativity, and exceptional flavour. You will find our products stocked by leading luxury retailers and many exceptional independents including the finest farm shops and delis.
The ideal candidate will possess a strong background in food production and kitchen management, demonstrating leadership qualities that inspire and motivate colleagues.
As the Executive Chef / Food Technologist, you will be responsible for overseeing all aspects of kitchen / production operations, ensuring the highest standards of food quality, safety, and presentation whilst having a major influence in new product development and the day to day running of the business.
Key Responsibilities:
Lead and manage our production and packing teams to ensure smooth daily operations, maintaining high standards of efficiency, quality, and output.
Ensure full compliance with food safety and hygiene regulations, with a particular focus on:
· General hygiene & food safety practices
· Allergen control
· HACCP
· Product traceability & recall procedures
· Manufacturing & finished product specifications
Develop, implement, and maintain Standard Operating Procedures (SOPs) and ensure all team members are fully trained in relevant practices and protocols.
Take ownership of compliance frameworks, driving the business towards successful accreditation with relevant food safety bodies such as SALSA and BRCGS.
Act as the key communication link between the production/fulfilment teams and senior management ensuring clarity, transparency, and accountability.
Identify opportunities to improve operational efficiency, waste reduction and contribute to continuous improvement initiatives across the facility.
Key Requirements:
Proven experience in a food production ideally within the confectionery / baking sector or a similar manufacturing / commercial food preparation setting.
Proven supervisory experience within a professional kitchen environment.
In-depth understanding of food safety standards, quality assurance, and regulatory compliance in food manufacturing.
Extensive culinary experience with a solid understanding of food production techniques.
Strong leadership and team management skills with the ability to train, motivate, and develop other team members.
Excellent communication and organisational skills, with a proactive and solutions-focused approach.
Interest and experience in collating nutritional data and food allergy information is essential.
Experience working towards or maintaining food safety accreditations such as SALSA and/or BRCGS is highly desirable.
