Responsibilities
* Lead all hotel F&B operations: meetings & events, breakfast, in‑room dining, restaurants, bars
* Execute the hotel F&B strategy and ensure brand standards are consistently applied
* Deliver departmental profit, manage all F&B cost lines while ensuring exceptional guest experience across all touchpoints
* Workforce planning: recruitment, rostering, retention, incentive plans for F&B teams
* Menu engineering and stock control: optimise menus, manage inventory, control beverage cost of sale
* Compliance: HACCP, Food Safety Level 3, FHIS pass rating, work toward Eat Safe Award
* Audit and resolve operational issues: food quality, service delivery, reservation processes
* Develop supplier partnerships and leverage opportunities for cost and quality improvements
* Drive colleague engagement: performance reviews, recognition, team development
* Analyse performance: prepare month‑end reports and present to senior leadership
* Stay ahead of market trends and implement new F&B initiatives
* Manage technology systems: reservation, POS (Micros Simphony), procurement (ProcureWizard), workforce planning (Quinyx)
* Collaborate cross‑functionally with Executive Chef, Commercial team and IHG support functions
* Achieve and maintain FHIS pass rating across all outlets and work toward Eat Safe Award where applicable
Qualifications
* Experience managing large‑scale F&B operations, multiple outlets, large catering & events business
* Commercial acumen: strong business and financial skills, develop and implement strategies that drive revenue growth, guest satisfaction, profitability
* F&B systems expertise: proficiency in Micros Simphony (or relevant POS), reservation systems, catering controls, payroll management
* Food safety & licenses: Alcohol Personal Licence and relevant industry courses, Food Safety Level 4 preferred
* Sales & marketing strategy: develop and execute F&B sales and marketing plans, leverage social channels, booking engines, on‑property promotions
* Industry knowledge: stay ahead of trends, technology, market shifts, drive innovation and elevate guest experiences
