Unit Manager - The Deck Restaurant We’re seeking an experienced and ambitious Unit Manager to lead the transformation of The Deck – Ocean’s signature waterfront restaurant – into one of Exmouth’s top dining destinations. The Deck is set to undergo a proposed full refurbishment and repositioning, with the goal of transforming it into a premium dining destination offering fresh, seasonal, and locally sourced produce. This will be complemented by exceptional service in a modern, coastal-inspired setting. As Unit Manager, you will play a pivotal role in shaping this exciting transformation, contributing your creativity and leadership to help design the future direction of the restaurant. This is a unique opportunity for a passionate hospitality professional with a strong background in plated or fine dining service, and the vision and operational skill to build something truly special. You'll work closely with our Hospitality Operations Manager, Group Head Chef and Business Manager to shape a guest experience that reflects the very best of the South West. About the Role: Oversee and lead the day-to-day operation of The Deck, ensuring high standards across service, food, cleanliness and safety Collaborate with the Group Head Chef on menu development and service style, ensuring consistency and creativity Manage rotas, stock, budgets and compliance processes, ensuring full operational efficiency Recruit, train and inspire a high-performing front of house team, supporting their growth and maintaining a positive culture Ensure all health & safety, food hygiene, and licensing requirements are met at all times Play a key role in marketing and promotional planning, working with the wider Ocean team on business development initiatives Support the wider Ocean complex by taking on Duty Manager responsibilities as required About You: You have solid experience managing in a restaurant or hospitality environment, with a particular strength in plated or premium casual dining You understand the importance of delivering both quality and consistency in guest experience You’re commercially aware, confident managing a P&L, labour costs, and stock You’re a strong people leader, able to build, support and motivate a team You bring ideas, initiative, and a sense of ownership—excited by the opportunity to help shape a restaurant's future You’re well-versed in compliance and safety protocols, and thrive in a well-organised, customer-led environment Why Join Ocean?
