About The Role
The role is to assist Senior Management in leading the team of chefs to exceed culinary standards, including food production, menu development, financial and food safety management targets.
Key Responsibilities
* Support the head chef in creative menu and food development across hospitality, banqueting and retail, including annual menu development and tailored bespoke menus.
* Manage food production to ensure high quality and minimise waste.
* Oversee kitchen brigades for racing and C&B events, aligning with the head chef’s roster.
* Coordinate with Operations to ensure adequate kitchen staff and hygiene within budget.
* Ensure compliance with legislation and company policies on allergens, food safety, health & safety and calorific content.
* Deliver GP targets and report monthly.
* Deputise for the head chef as required.
* Stay abreast of industry developments and best practice.
* Perform other duties as assigned.

* Minimum 3 years of senior-level experience in food & beverage or hospitality at similar venues.
* Excellent food knowledge, including current trends, menu development and presentation.
* Strong leadership and teamwork skills, leading by example.
* Strong communication and relational skills.
* Ability to nurture and grow talent within the team.
* Proactive, responsive and positive attitude.
* Experience in operations and margin control.
* Excellent organisational and practical skills.
* Ability to manage conflicting demands and tight deadlines.
* IT literate with good Excel skills.
