Were excited to announce the opening of our second venue at the iconic Olympia London, launching in March 2026. As we prepare for this major new chapter, were searching for an experienced and inspiring Head Chef to join our senior kitchen leadership team from the outset.

D3 Collective is a group of companies founded by Des Gunewardena, bringing together a portfolio of distinctive restaurants, bars, and live event venues. The company partners with a range of investors, acclaimed chefs, and leading restaurateurs to create unique, experience-driven hospitality concepts. D3s current projects include two venues at the Royal Exchange: Engel, a bar inspired by 1920s Berlin, and Jang, a refined Korean Japanese dining destination. At the Grade II-listed Pillar Hall in Kensington Olympia, the group will launch in Spring 2026, Idalia, a grand and vibrant 300-cover all-day restaurant; Pepperbird, an intimate speakeasy influenced by Olympias musical heritage and Pillar Hall; and Upstairs at Pillar Hall, a striking 500-capacity event space evolving into a restaurant and bar with live music at weekends.
The Role
As Head Chef, youll work closely with the Executive Head Chef, taking a leading role in the day-to-day management of the kitchen. This is a senior, hands-on position responsible for maintaining exceptional culinary standards, leading the brigade, and ensuring smooth, high-quality service at all times.
Youll be instrumental in menu development, team leadership, and operational excellence, helping to shape the identity and success of our new Olympia venue.
What Were Looking For
Proven experience as a Head Chef in a high-volume or high-quality dining environment
Strong leadership and people management skills
Excellent cooking, presentation, and menu development ability
In-depth knowledge of food safety, hygiene, and HACCP
Strong organisational, communication, and time management skills
Experience with budgeting, cost control, and food margin optimisation
Ability to thrive under pressure and manage multiple priorities
Key Responsibilities
Support the Executive Head Chef in leading all aspects of kitchen operations
Oversee menu development, food preparation, and service standards
Lead, train, and develop the kitchen team to ensure consistency and excellence
Manage kitchen rotas, staffing levels, and time management
Monitor stock levels, place orders, and control food costs and waste
Ensure full compliance with food safety, hygiene, and health & safety regulations
Maintain a clean, organised, and professional kitchen environment
Conduct regular quality checks and kitchen inspections
Collaborate closely with front-of-house and management teams to deliver seamless service
Lead by example, fostering a positive, motivated, and high-performing kitchen culture
