Job Summary


We are offering an exceptional opportunity for a visionary Director of Food Beverage to join our Executive Team to lead Food Beverage operations through an exciting period of transformation at the fabulous Forest of Arden Hotel Country Club. As part of our leadership team, you will play a pivotal role in redefining our culinary identity, elevating service standards, and creating unforgettable guest experiences across our restaurants, bars, and event spaces.

This executive role will oversee all dining outlets, including our Fairway Bar and Grill, Zest Bar, banqueting suites, In-room dining and the Kitchen, ensuring exceptional guest experiences and operational excellence. This role ensures that the Food and Beverage operation meets the guests needs, ensures the team are supported and focuses on growing revenue and maximising the financial performance of a £5M+ FB operation.

The ideal candidate will bring strategic leadership, a passion for hospitality, and a proven history within high volume, fast paced food and beverage operations, ideally within a resort environment.


Candidate Profile



Experience:

* Progressive experience in food and beverage leadership roles, ideally within resort-style hotels.
* Demonstrated expertise to manage large teams and complex operations.


Skills and Knowledge:

* Strong leadership, communication, and people skills.
* Deep understanding of culinary trends, wine and beverage programs, and service standards.
* Financial acumen and experience with budgeting, forecasting, and PL management.


Education or Certification:

* Degree in Hospitality Management, Culinary Arts, or related field preferred.


Key Responsibilities


Strategic Leadership

* Develop and execute a long-term vision for the FB department aligned with the hotel's brand and guest expectations.
* Innovate and enhance dining concepts, seasonal menus, and promotional events.
* Collaborate with senior leadership on budgeting, forecasting, and capital planning.
* Work with the executive leadership team to align the FB Strategy with the hotels strategic plan.
* Set, achieve and exceed goals including performance, budget, and team goals.
* Engage with the Executive Head Chef and outlet managers to create innovative menus and service concepts.
* Explore new business opportunities to generate revenue.
* Analyse information and evaluate the results to choose an appropriate solution and solve problems.
* Ensuring that expectations and objectives are clearly communication to the team.

Operational Oversight

* Ensure smooth daily operations across all FB outlets, including Fairway Bar and Grill Restaurant, Zest Bar, Banqueting, Kitchen, and In-room service.
* Maintain high standards of food quality, presentation, and service.
* Ensure compliance with Health and Safety and Food Safety regulations.

Financial Management

* Drive revenue growth and profitability across all FB areas.
* Interpret financial data to accurately forecast.
* Manage departmental budgets, control costs, and monitor financial performance.
* Analyse KPIs and implement strategies for continuous improvement.
* Make recommendations for the CAPEX funding of FB equipment and renovations in line with the hotel strategy.

Team Leadership

* Lead, influence, and encourage others, whilst demonstrating honesty, integrity and leading by example.
* Empowers and supports the FB management team to make the right decisions to achieve the correct outcome for the guest.
* Coach, mentor, and develop a high-performing FB team.
* Oversee recruitment, training, and performance management.
* Foster a culture of excellence, innovation, and accountability.
* Recruits the right candidates to fill the FB management vacancies, who can demonstrate strong functional expertise, creativity, and entrepreneurial leadership to meet operational needs.

Guest Experience

* Champion a guest-first approach in all aspects of service delivery.
* Manage VIP requests and ensure personalised experiences.
* Monitor guest feedback and implement service enhancements to ensure guest satisfaction and retention.
