Dunalastair Hotel is hiring a Sous Chef to support our Head Chef and help deliver consistently high standards across every service. This is a hands-on role for a calm, organised leader who enjoys developing a team, running a smooth pass, and stepping up to take full kitchen responsibility when required.
If you’re an experienced Sous Chef from an AA 1–2 rosette (or higher) environment (or equivalent), and you’re confident with HACCP, Food Safety Scotland guidance, stock control, and service leadership, we’d love to hear from you.
What you’ll be doing
Supporting the Head Chef with daily kitchen operations: prep, cooking, and service delivery.
Running the kitchen in the Head Chef’s absence: leading the brigade, managing the pass, and maintaining consistency, standards, and pace.
Supervising and coaching the team to ensure recipe compliance, production consistency, and excellent presentation.
Helping manage guest feedback and food quality concerns when escalated.
Assisting (as required) with rotas, ordering, GP control, HR/discipline matters, and allergen compliance.
Supporting menu planning in line with the property’s needs and seasonal availability.
Managing stock control: monitoring inventory, assisting with ordering, maintaining accurate records, and ensuring operational stock levels.
Checking deliveries and invoices to ensure correct quantities and that all produce meets quality standards.
Maintaining excellent kitchen hygiene and compliance with HACCP, food safety legislation, and Food Safety Scotland guidance.
What we’re looking for
Proven experience as a Sous Chef (or strong Junior Sous ready to step up) in a quality-led kitchen.
Background in an AA rosette-standard property (1–2 rosette or higher) or equivalent.
Ability to work across all sections to a consistently high standard.
Confident, supportive leadership style: you can motivate, train, and set clear standards.
Strong organisation and time management during busy service.
Clear communication with kitchen and front-of-house teams.
Strong knowledge of HACCP, allergens, and food safety best practice.
