Role Overview
Reporting to the Hotel Operations Manager, you will assist in spearheading the culinary experience for our Amicable Societies & Chambers F&B Brand. You will help drive a high-quality, lifestyle Restaurant & Bar Food offering. Your main place of work will be Apex Temple Court Hotel, with cluster responsibilities as directed by the Hotel Operations Manager or Regional General Manager. You will work with suppliers, in-house centralised services, and on-property kitchen and front-of-house teams to develop and implement efficiency and quality improvements across all service outlets. You will help ensure sustainable profit growth across outlets. As part of the senior management team, this role will involve operational shift coverage across a seven-day week rota. As Head Chef, you will, with your Sous Chef, ensure the smooth running of the Kitchen, build a high-performing team and culture, and create lifestyle, Instagram-worthy dishes.
Main Responsibilities
* Developing a multi-skilled culinary team that delivers payroll flexibility with minimal tiers
* Collaborate with the Food and Beverage Manager to translate annual strategic business plans into departmental scorecard targets and activity plans
* Maintain high visibility at key service periods with attention to culinary delivery
* Own and act on in-stay and post-stay culinary feedback to address quality gaps
* Maximise sales and profit while ensuring customer satisfaction
* Coach, train and support all Chefs and apprentices to maintain high standards while continually improving
* Assist in developing and coordinating a community/social calendar of events for team members
* Deliver regular staff communications on business trading as directed by the Cluster General Manager
* Daily/weekly payroll and food cost analysis in line with forecasted revenue, ensuring corrective action within the same trading period
