Head Sommelier

Cromlix is a five-red-star country house hotel with a Michelin Key, set within 34 acres of woodland and gardens. Owned by Kim and Andy Murray, Cromlix is entering an exciting new chapter with the creation of a new fine-dining restaurant, designed to sit at the very top end of the UK hospitality landscape.
We are now seeking an exceptional Head Sommelier to play a leading role in this next phase — shaping a world-class wine programme and delivering a level of service, knowledge and guest engagement befitting a truly fine-dining environment.
The Role
As Head Sommelier, you will have full ownership of the wine offering at Cromlix, with a particular focus on the new fine-dining restaurant. Working closely with the Fine Dining Restaurant Manager and the Hotel Food & Beverage Manager, you will help shape service standards, guest flow and the overall dining experience, ensuring wine service is seamlessly integrated into every element of the operation.
You will curate a sophisticated, expressive wine list that complements the culinary vision, elevates the guest journey and reflects both classic and contemporary thinking. This is a senior, highly visible role requiring outstanding product knowledge, precision of service and the ability to connect naturally with guests at the highest level.
Key Responsibilities
* Design, manage and evolve the wine programme for Cromlix, with a strong focus on the fine-dining restaurant
* Work in close partnership with the Fine Dining Restaurant Manager and Hotel Food & Beverage Manager to deliver a cohesive, high-performing operation
* Deliver polished, confident and engaging wine service at a true fine-dining standard
* Collaborate with the kitchen team on pairings, tasting menus and special events
* Source wines with a balance of provenance, storytelling, quality and commercial awareness
* Manage cellar organisation, purchasing, stock control and GP
* Train and develop the front-of-house team to deliver informed, confident wine service aligned with fine-dining expectations
* Act as an ambassador for Cromlix, representing the restaurant with professionalism, warmth and authority
* Uphold and continuously refine service standards in line with the restaurant's ambitions
About You
* Proven experience as a Sommelier in a fine-dining or Michelin-level environment
* Exceptional wine knowledge with the ability to communicate it clearly and engagingly
* WSET Level 3 minimum (Level 4 or equivalent experience highly desirable)
* A calm, confident presence on the floor with meticulous attention to detail
* Commercially astute, organised and disciplined in approach
* Passionate about excellence, learning and raising standards
* A collaborative leader who enjoys working as part of a senior management team
