Bar, Lounge and Terrace
This department comprises 2 key areas, bar service (hot and cold, alcoholic and non alcoholic beverages) as well as basic food from the bar menu, and afternoon tea.
Your time in Bar Lounge and Terrace will see you work in both of these key areas, developing high levels of product knowledge in the bar, and exceptional service standards through the afternoon tea experience.
Fork Restaurant
Fork is the hotel Restaurant, serving breakfast, lunch and dinner and all day dining options. You will look after conference delegates as well as Leisure guests, whilst servicing the terrace for those who wish to enjoy or gardens.
During your time in Fork you will understand how to prepare the restaurant for services. You will learn the sequence of service and how to serve guests to our standards. You will develop high levels of menu knowledge in both food and wine.
Conference & Banqueting
The C&B department is home to our 12 function rooms, used for a variety of events from weddings to conferences, baby showers to corporate meetings and internal meetings to full exclusive use events. You will get experience of the full range of events, including how to set up and prepare for them, as well as working them. There will be elements of food and beverage service for the banquet side of the department including plated service, snake service, champagne and canapé receptions. For the conference side of the business there will be coffee stations, break out food and buffets, setting up of audio visual equipment and so on.
Additional Exposure
As placement students you will also have the opportunity to attend a Head of Department meeting, where you will sit with the managers of the Resort and be involved in business discussions and decisions.
We also provide the opportunity to spend some time cross training in the specialisms of Accounts, Human Resources and Sales should this be of interest.
