About the Role
Hale Country Club & Spa is recruiting for a full‑time Sous Chef to join our team. We are looking for talented individuals with a passion to create delicious food from freshly cooked ingredients, ready to deliver exceptional service and enhance the dining experience for our esteemed members and guests.

As a Sous Chef You Will Be
* Lead the kitchen team in head chef’s absence.
* Plan the daily operations of all kitchen sections to meet service standards.
* Oversee cost management and control.
* Manage rotas in accordance to business levels.
* Ensure a first‑in, first‑out food rotation system and verify all food products are properly dated and organised for quality assurance.
* Manage and maintain a clean, safe working environment.
* Adhere to health and safety policies at all times.
* Ensure proper stock rotation and food quality assurance.
* Work with head chef to maintain kitchen organisation, staff ability, and training opportunities.
* Contribute to menu development with creative ideas that enhance dining experiences.
* Follow recipes and presentation specifications.
* Ensure the cleanliness standards are kept.
* Manage a clean and efficient kitchen department.
* Take charge of running shifts.
* Ensure producing food on time, consistently and accurately.
What Skills and Experience do I need for this role?
* Previous experience in a busy kitchen environment in a similar role.
* Great attitude towards work & colleagues.
* Desire to learn new skills & passion for food.
* Ability to track expenses and manage a budget.
* Excellent use of various cooking methods, ingredients, equipment and processes.
* Ability to multitask and work efficiently under pressure.
* Knowledge of best cooking practices and understanding of trends and new styles.
* Attention to detail and high standards of presentation, creative flair and imagination.
* Experience working in a diverse environment.
* Good communication and team‑working skills.
