The Role
We are seeking a talented and enthusiastic Sous Chef to support our Head Chef in running a busy kitchen. This hands-on role is perfect for a passionate culinarian who thrives in a fast-paced environment and shares our commitment to fresh, home-cooked fare. As Sous Chef, you'll play a key part in menu development, food preparation, and maintaining the high standards that our guests expect. Key Responsibilities
Assist the Head Chef in planning, preparing, and executing daily menus featuring home-cooked, seasonal dishes.
Oversee kitchen operations during service, ensuring food is prepared to the highest quality, efficiently, and safely.
Supervise and train junior kitchen staff, including line cooks and prep team, fostering a positive and collaborative team environment.
Manage stock control, ordering ingredients from local suppliers, and minimising waste to support our sustainable practices.
Maintain strict compliance with food hygiene, health & safety regulations, and kitchen cleanliness standards.
Step in to cook during peak times, plate dishes, and handle dietary requirements or special requests.
Contribute to menu innovation, specials, and events while upholding our focus on traditional pub classics with a modern twist.
Liaise with front-of-house teams to ensure seamless service and guest satisfaction.
What We're Looking For
Proven experience as a Sous Chef or Senior Line Cook in a busy pub, restaurant, or hotel kitchen (fresh food focus preferred).
Strong knowledge of classic and modern cooking techniques, with expertise in roasting, grilling, and batch preparation for high-volume service.
NVQ Level 2/3 in Professional Cookery or equivalent; food hygiene certification (Level 3 preferred).
Excellent leadership skills with the ability to motivate and develop a small team.
A hands-on, proactive attitude with a genuine passion for home-cooked, quality food.
Ability to work under pressure in a seasonal, event-driven environment (split shifts, weekends, and evenings required).
Reliable, organised, and team-oriented, with a positive can-do mindset.
