Mount Royal Hotel Edinburgh by the Unlimited Collection is looking for a passionate and dynamic individual with a flair for leadership and a commitment to exceptional service to join our team as a Breakfast Manager.
Responsibilities
* Take responsibility for the daily breakfast operations of both Front of House and Kitchen teams, ensuring smooth and efficient service
* Assist the Food and Beverage Manager in developing and implementing the business plan, identifying commercial opportunities to maximise revenue and deliver against budget targets
* Lead by example in delivering a memorable breakfast experience that exceeds guest expectations
* Ensure compliance with all health and safety regulations while maintaining a clean, safe, and welcoming environment
* Support in the recruitment, training, and coaching of new team members across FOH and BOH, fostering a positive, service-led culture
* Oversee the planning and delivery of rotas to meet business needs while maintaining excellent service standards
* Monitor food quality and presentation, ensuring consistency with the hotel’s high standards
* Maintain effective stock control, oversee breakfast pricing in the catering software system, and ensure all financial procedures are followed accurately
* Assist the Food and Beverage Manager in the analysis and use of financial data to drive optimum performance
* Liaise with suppliers and clients, sourcing locally where possible and promoting sustainability and quality
Qualifications
* Previous hospitality experience at managerial level
* Previous 4-star hotel restaurant experience
* Previous experience in a Rosette environment is preferred but not essential
* Customer-focused approach with excellent customer service skills
* Previous experience of handling customer complaints and guest requests professionally
* Excellent team-leading skills with the ability to motivate and inspire
* Ability to communicate clearly and concisely with guests and colleagues
* Excellent organisational skills with the ability to multi-task and troubleshoot under pressure
* A well-organised, outgoing, and service-minded personality
* Confident and courteous manner
* The ability to coach, lead and motivate a team to deliver first-class service
* Strong organisation and planning skills, with the ability to manage multiple priorities
* A good command of English is essential; a second language is advantageous
* A positive, proactive approach to delivering service excellence and driving commercial success
