Pastry Chef de Partie – Michelin Guide Restaurant
Poynings, near Brighton (BN45) | £30,000 – £38,000 DOE | Plus £5,000–£8,000 Tronc

A Michelin Guide–listed restaurant in Sussex is seeking a talented Pastry Chef de Partie to join the team. This is a fantastic opportunity for a creative and ambitious chef to focus exclusively on pastry within a respected kitchen, while still enjoying the collaboration, support, and direction of a strong Head Chef and brigade.


The Role

* Take ownership of the pastry section at Chef de Partie level

* Prepare and deliver high-quality desserts, pastry items, and afternoon offerings

* Work to established recipes and standards, while contributing ideas in a collaborative environment

* Maintain prep levels and keep the section running smoothly during service

* Ensure food safety, hygiene, and kitchen organisation are upheld at all times

* Support the Head Chef and wider team as required


What We’re Looking For

* Previous experience as a Chef de Partie with strong pastry skills

* Creativity and flair, balanced with precision and consistency

* Passion for fresh, seasonal ingredients and modern presentation

* Ability to follow recipes and direction from the Head Chef while adding your own input

* Calm, reliable, and able to perform under pressure

* Team player with a positive attitude


What We Offer

* Salary £30,000 – £38,000 DOE

* Tronc tips shared across the team — typically £5,000–£8,000 per year

* 40–50 hours per week, structured rotas

* 28 days holiday per year

* Staff meals on shift

* Uniform provided (T-shirt and apron)
