The Food & Beverage Director is a strategic leadership role, reporting to the COO, working along side our Hotel Directors, overseeing all F&B operations across THE PIG group. Responsible for shaping our food concepts, driving profitability, and setting service standards, this role ensures consistency across kitchens, restaurants, bars, and wine operations while inspiring and developing the next generation of F&B leaders. Managing responsibilities at group level functions for Bar, Food & Wine.
You will play a key role in defining our F&B strategy, leading concept development, and aligning menus and pricing to market trends and protecting PIG brand values as we grow. With responsibility for financial performance, operational efficiency, and team development, you will deliver innovative, profitable, and memorable guest experiences across multiple locations.
Key Responsibilities
1. Lead food concept and menu development, ensuring profitability and alignment with THE PIG brand.
2. Implement group-wide F&B strategy, driving consistency, efficiency, and future growth.
3. Oversee all F&B operations, ensuring service excellence, compliance, and guest satisfaction.
4. Manage F&B budgets, forecasting, supplier negotiations, and P&L performance.
5. Lead and inspire group-level managers, building succession pipelines and developing talent.
6. Champion guest experience, using insights and trends to drive innovation.
7. Support new openings, labour planning, and operational readiness.
Essential Experience
8. Senior F&B leadership in a multi-site hotel or restaurant group.
9. Proven record in food concept development, menu engineering, and operational excellence.
10. Strong financial acumen, managing multi-million-pound budgets.
11. Skilled at leading and developing large, diverse teams.
12. Knowledge of F&B trends, guest expectations, and regulatory requirements.
