F&B Manager - Holiday Park

We are working with a Holiday Park operator with several parks across Lancashire and Cumbria who are looking for an F&B Manager for their flagship park in Lancashire.
Key Responsibilities
* Ensure the efficient and profitable operation of F&B and retail outlets, operating these departments within
budgeted guidelines, tracking sales data and analysing profit margins to ensure that targets are met or
exceeded.
* Ensuring that F&B/retail teams deliver consistently excellent levels of internal and external customer service.
* Recruit, train, and performance manage to ensure a high-performing hospitality team.
* Act as manager on duty when on shift
* Prepare cost-effective rotas, in line with company timescales, budgets, targets and customer demand.
* Monitoring the quality of customer service to ensure that all staff members are providing a consistently
excellent service to guests.
* Ensuring that consistently high food preparation and food hygiene standards are met by all team members.
* Provide cover in the kitchen and/or on the bar, when necessary
* Creating/design menus for each food outlet to maximise demand and reflect seasonal offerings, local produce, and popular dishes. Menus should be continuously reviewed and adapted to make necessary improvements, with particular focus on themed events, specials, seasonality and regionality.
* Delivery of an entertainment programme to deliver compelling reasons for our owners and guests to visit our
venues and maximise retail opportunities provided during such events.
* Setting sales prices and calculating theoretical margins in line with and to achieve required objectives
* Liaison with suppliers to ensure that the best prices are obtained and appropriate stock levels are maintained.
* Managing stock controls across the parks. Ensure processes are documented and trained, manage the stock
takers and ensuring results are followed up and action taken to address issues raised.
* Responsibility for cellar security, line checks, float checks and cash management procedures including safe
access.
* Monitor KPIs and implement continuous improvements to enhance guest satisfaction
* Communicate regularly with department managers/supervisors and conduct effective staff briefings.
* Deal with all customer feedback effectively, ensuring that any issues or complaints are dealt with promptly
and appropriately, informing long-term improvements into our products and services.
* Work closely with our Marketing team to develop pre-planned promotions, POS and specific campaigns to
increase sales to both existing and new customers. Communicate all F&B/retail marketing activity to team
members to improve service and maximise spend.
* Ensure compliance with all relevant statutory and food and beverage legislation both for yourself and your
team, relating in particular to health & safety, COSHH, food hygiene, fire and emergency procedures.
