This is a serious, produce-led kitchen with a strong sustainability ethos and a deep connection to its landscape. The menu is shaped by the seasons and built around wild game, pasture-bred livestock from neighbouring farms, Northumberland coastal fish, and classical technique with minimal intervention.
Whole-animal butchery, preservation methods such as pickling and fermentation, and careful larder management form the backbone of the kitchen’s philosophy.

The Role
As Chef de Partie, you will:
* Run your own section within a Rosette-level brigade
* Execute dishes across tasting and à la carte menus to exacting standards
* Work with whole animals and seasonal produce
* Maintain meticulous mise en place and organisation
* Contribute to menu development and seasonal progression
* Uphold strict food safety and sustainability practices

* 4 days per week
* 48 hours contracted
* Mondays & Tuesdays off
* One additional weekday off
Kitchen open:
* Dinner Wednesday
* Lunch & Dinner Thursday–Sunday
