An exciting opportunity has arisen for an experienced Restaurant Manager to take the lead at a thriving 24-bedroom hotel and restaurant in the Gloucestershire countryside. Following a recent multi-million-pound refurbishment, the venue now combines luxury accommodation, a high-volume restaurant, and a buzzing bar, attracting guests for weddings, events, and destination dining.
With a weekly turnover of £80,000–£110,000 and a team of 20–25 front-of-house staff, this is a fast-paced, rewarding environment for a motivated leader who thrives on delivering exceptional service while keeping the operation running efficiently.

The Role
As Restaurant Manager, you will:
* Oversee the day-to-day operation of the restaurant, ensuring smooth service across high-volume covers (up to 400 per day at weekends).
* Lead, train, and motivate a team of assistant managers, supervisors, and waiting staff.
* Implement and monitor SOPs, maintaining the highest levels of service, hospitality, and guest care.
* Plan and manage rotas, keeping labour costs and forecasting on target.
* Drive sales and profitability through upselling, guest engagement, and effective cost control.
* Conduct daily briefings, ongoing training, and one-to-one coaching.
* Resolve guest concerns quickly and professionally, maintaining a positive reputation.
* Collaborate closely with the kitchen team to deliver seamless service.

* Experienced Restaurant Manager or strong Assistant Manager looking to step up.
* Proven ability to lead large teams (20+ staff) in a busy, food-led environment.
* Strong commercial awareness with a track record in labour cost control and rota planning.

* High standards for guest service, presentation, and consistency.
* A proactive problem-solver with excellent organisational skills.
* Flexible and adaptable, with availability to work a mix of mornings, evenings, and weekends.
