About the role:
Join a vibrant, bustling Brasserie and help lead the vision for the future
To assist and co-ordinate the efficient running of any service in Clocktower Brasserie.
Take a lead for developing team members with training and development plans.
Deputise for the Clocktower Brasserie Manager in terms of team representation at Resort Meetings as well as the daily running of the Brasserie
Key responsibilities:
To assist and ensure communication between Brasserie and kitchen works effectively to underpin the service flow of all services.
To work closely with Clocktower Brasserie Manager to ensure standards are met.
To debrief team after every service with positive and negative points to work on.
Promote consistency within the Clocktower Brasserie utilising set Standards of Operation.
Working Relationships/Communication
* To carry out Clocktower Brasserie Management shifts when required.
* To ensure that all comments and complaints are communicated through the relevant methods and deal with challenges verbally and through other mediums when needed.
* To assist with communication throughout the department, including the implementation of: Daily briefings, Weekly meetings with the Brasserie Manager, and assist with monthly meetings with staff.
* Attend relevant Resort Meetings to ensure all information is cascaded to the team.
Productivity
* To assist the Brasserie Manager in setting up and implementing policies and procedures.
* Be agile with staffing levels in line with set monthly and quarterly targets.
* Assist Brasserie Manager with interviewing of potential new staff.
* Be able to analyse business needs in terms of stock requirements and day to day consumables.
Standards
* To provide the highest level of service to all guests of Rudding Park.
* To ensure that all staff under your jurisdiction are fully trained and that training plans and records are kept for each individual staff member
* To carry out training as necessary to ensure that the policies and procedures laid down are followed by all staff under your jurisdiction.
* Be aware and promote the Net promoter score for Clocktower Brasserie and awareness of the Food and Beverage Team as a whole
* Be a standard bearer for aesthetics within the Brasserie environment.
Financial Responsibility
* Ensure billing is completed at end of shift including any non-resident payments and folio charges.
* Uphold the void and discount policies that have been implemented
* Maintain and promote upselling initiatives within the Brasserie
* Be aware and promote cost effective measures implemented on monthly or quarterly basis.
Standards
* To maintain Rudding Park set standards as well as departmental procedures.

General
* Be responsible for Health and Safety as an individual and also to work colleagues, customers and the business, reporting concerns through the Health and Safety processes and procedures.
* Ensure continuous professional development of self, including attending required training courses and seeking means of developing within the business
* Promote continuous improvement in the level of quality and customer care provided by the business and make proposals/suggestions where applicable
* Respect colleagues and the working environment at all times.

* Undertake any other duties commensurate within the position for which you are qualified.
In return for your hard work and commitment we offer:
* Enhanced pay - 50p per hour for evening work after 7pm (Sunday - Thursday), £1 per hour for weekend day work until 7pm (Saturdays and Sundays), £1.50 per hour for evenings from 7pm (Friday and Saturdays)
* Service Charge (Tronc) earn up to an additional £5,000 per year
