The role
You will work closely with the Group Executive Chef to shape Brookes signature menu style. With our frequently changing, seasonally-led la carte offerings, youll drive innovation, consistency, and excellence.
Key Responsibilities
Develop and refine seasonal la carte menus that reflect Brookes creative yet classic British approach and maintain award-worthy standards.
Collaborate with the Group Executive Chef to build Brookes signature food identity and strategy.
Recruit, inspire, and nurture a career-driven kitchen brigadeas Brooke embarks on its exciting next chapter.
Execute rigorous cost management: GP, yields, stock, portion control, and waste minimisation.
Ensure compliance with food safety, HACCP, allergens, COSHH, and EHO standards.
Preferable: proficient with Alert65.
What You Bring
Demonstrated Head Chef or strong Senior Sous experience in Londons fresh-food kitchens (gastropub, modern British, fine dining), ideally with accolades or strong recognition.
A refined portfolio of seasonal dishes balancing innovation, consistency, margin, and execution.
Proven leadership: confident at the pass, skilled at mentoring, and dedicated to building a resilient, ambitious team.
Strong commercial acumen and operational precision.
