Leadership and Management of the Kitchen & Menu at The Swan Pub Readinf
We're looking for an organised, reliable, innovative and experienced Head Chef.
The Swan is an Independant traditional English pub nestled in a cosy little corner of Reading. The pub acts as community hub with a warm and local feel. The pub itself retains many of its 18th century features and charms.
Duties and responsibilities include.
Leading the Kitchen Team:
Supervising, motivating, and training kitchen staff, including sous chefs, commis chefs, and other cooks.
Delegation and Time Management:
Assigning tasks and responsibilities to team members, ensuring tasks are completed efficiently and on time.
Conflict Resolution & Disciplinary:
Addressing any issues that arise in the kitchen and ensuring a positive and productive work environment, as well as initiating any formal or informal forms of capability or disciplanary measures should they arise.
Menu Development and Innovation:
Menu Planning: Creating and adapting menus to meet customer preferences, dietary restrictions, and seasonal availability.
Recipe Development: Developing new recipes and dishes, while also maintaining the quality of existing menu items.
Cost Management: Calculating food costs and working with suppliers to ensure profitability.
Ensuring Food Quality: Maintaining high standards for food preparation, presentation, and taste.
Food Safety Compliance: Adhering to all health and safety regulations, including food hygiene practices.
Inventory Management: Managing inventory levels, ordering supplies, and ensuring proper storage of food items.
Operational Management:
Kitchen Organization: Ensuring the kitchen is clean, organized, and efficient, with all equipment functioning properly.
Communication: Effectively communicating with restaurant management, front-of-house staff, and suppliers.
Customer Service: Addressing any customer concerns or complaints regarding food quality or service.
Record Keeping: Maintaining records of food orders, inventory, and staff performance.
Compliance: Ensuring compliance with all relevant regulations and standards, including those related to food safety and sanitation.
