Richmond Village in Aston on Trent is looking to appoint a Sous Chef to join their team. The role of Sous Chef in this luxury retirement village is a unique blend of culinary skill and lifestyle balance. With a roster planned ahead and sociable shifts, you will enjoy a harmonious work-life rhythm while showcasing your talents across a variety of dining settings, from the intimate care home to the bustling restaurant and club house.
Our Sous Chef plays a crucial role in our restaurant’s kitchen operations for maintaining kitchen efficiency and food safety, ensuring food quality, and supporting the Head Chef’s vision and responsibilities. This role also serves as a stepping stone for aspiring chefs aiming to become Head Chefs.
Passionate about food, you bring experience working in a variety of high-volume, multi-service, and quality kitchens. With expertise in diverse cuisines and cooking techniques, you possess a comprehensive understanding of the catering industry, including Care Homes, and experience in either hotels/conference centres and outside catering or high-quality pubs and restaurants.
You will be highly aware of and skilled to adapting to customer food allergen and healthy eating requirements and may also have experience in providing modified foods to those in later life, whilst maintaining food quality and presentation to that of a luxury experience.
Responsibilities
* Catering to residents across the Village which comprises a 60 bed care home, catering for residents in our 49 serviced suites, as well as providing excellent food to customers in our 80-seat table d’hote restaurant and 40 seat Café Bar.
* Creating and adapting menus to suit customers across varied outlets, reviewing menus on at least a quarterly basis. Familiar with food specifications and food costings to accompany menu planning.
* Managing all kitchen duties such as budgeting, ordering, stock control, HACCP checks, preparation of food and disposal of waste.
* Working with other members of the hospitality team to ensure smooth delivery of service and advising on aspects of food handling related to their work.
* Maintaining systems for the kitchen to ensure smooth and safe service delivery; processes and procedures followed; equipment managed and well maintained.
* Ensuring all kitchen staff are trained, duties delegated, and supporting recruitment and onboarding of staff for the catering department as required.
* Assisting during the head chef’s absence with tasks such as rotas, returns to work and supervision of the kitchen team.
Key Skills / Qualifications
If you're passionate about food and have a minimum of two years' experience in a supervisory or leadership role within a care home or hospitality setting within a professional kitchen, preferably serving customers with special dietary needs, you may be the perfect fit.
A solid understanding of health and safety protocols is essential, along with a minimum of NVQ Level 2 in Catering and a CIEH Level 2 Food Safety Award, or an equivalent qualification or experience.
You should be open to innovation, with a creative approach to cooking and the skill to craft nutritious, balanced, and appealing menus with new food products. A collaborative spirit and a positive communication style is key, as you’ll be part of a team dedicated to providing an outstanding dining experience at every meal.
