Job Purpose: To lead the Sunlaws Restaurant Team and to ensure the smooth delivery of services and create an exceptional and memorable food and beverage experience for our guests dining in Sunlaws Restaurant.
Your Key Responsibilities:
Lead Sunlaws restaurant team to ensure a seamless and efficient dining experience at SCHLOSS Roxburghe
To work as part of a team, supporting and helping each other with developing and operating all aspects of the business.
You will assist with leading and inspiring the F&B team to exceed in their roles, through guidance, training and setting an example.
You will support the Operations Manager in the development of the Sunlaws Restaurant team, to include Training Plans, Promotions and an overall Emotionally Intelligent team.
You will work closely with the Chef Team to ensure cohesive communication leading to guest satisfaction.
You will take accountability of the set up of the Restaurant in line with company standards, and oversee the restaurant cleanliness
You will take accountability of Mise-En-Place Checklists, ensuring that at no time is any key tool missing from the Overall Service
You will support the Operations Manager in Beverage Ordering, notifying the Operations Manager of any shortages
You will oversee the management of wine within the restaurant, to include control of wastage and correct recording of all beverage.
You will deliver a memorable food and beverage experience for our guests, assisting them with menu choices in an informative and enthusiastic way.
Maintain sufficient manning for each shift, reviewing regularly during peak occupancy levels.
Constant review of MEDALLIA feedback while implementing fast actions to improve guest satisfaction.
Lead daily briefings to ensure all relevant information is shared.
You will maintain the highest standards of service, room preparation and presentation throughout the Restaurants and Bar
You will maintain consistent and effective communication with all departments to ensure the smooth running of the F&B service.
Be confident in and control cash handling and cash up procedures in line with policies and procedure, ensuring that any queries are rectified with accounts in a timely manner.
Cover other F&B Outlet Cash Ups where required.
Proficiently up sell and encourage other team members to do the same at every opportunity.
You will ensure quality standards with respect to food, beverage and customer service are consistent and delivered daily.
You will attend relevant Management Meetings, ensuring professional communication at all times.
You will actively manage on the floor while building a rapport with colleagues and guests.
You will manage guest recovery situations promptly and effectively and communicate updates.
Support management with stock takes, organisation and securing your outlet beverage control.
You will contribute to ideas and initiatives to develop our quality of food and service and increase revenue in the department.
Support with training of new team members.

Proven Experience/Qualifications:
Minimum of 2-years experience in Food & Beverage or the hospitality industry, preferably within a fine dining setting.
Previous experience in a supervisory role.
Experience, knowledge and understanding in the luxury hospitality industry.
