The Role
Were looking for an experienced, hands-on and commercially aware Bar Manager to lead our bar operation.
This role is ideal for someone who combines strong service leadership with excellent stock control, team development and drinks knowledge. Youll be responsible for the day-to-day running of the bar, ensuring consistently high standards in service, drinks quality, compliance, team performance and profitability.
This role operates at an Assistant General Manager level, with a specialist focus on the bar operation rather than floor management. Youll work closely with the General Manager and wider leadership team to drive standards, support the team and deliver a strong, well-run bar business.
What Youll Be Doing
Bar Operations
Leading the bar team from the front during service and setting the standard for pace, energy and professionalism
Overseeing the day-to-day running of the bar, including open and close procedures, prep, organisation and readiness for service
Ensuring consistently high standards in drinks quality, presentation, speed of service and guest experience
Maintaining a clean, organised and well-run back bar, cellar and storage areas
Ensuring all bar equipment is used correctly, cleaned properly and maintained to company standards
Supporting the wider management team in delivering smooth daily operations
Stock & GP Responsibilities
Taking ownership of wet stock management, including ordering, deliveries, storage, stock rotation and stocktaking
Monitoring stock levels closely to ensure availability while controlling waste and over-ordering
Managing bar gross profit through strong controls around measures, specs, pricing, wastage and yield
Investigating stock discrepancies and GP issues, and taking action to improve performance
Using stock systems confidently for ordering, stocktakes and reporting
Working with approved suppliers to maintain product quality, availability and value
Team Leadership & Training
Leading, motivating and developing the bar team to deliver strong performance and high standards
Supporting recruitment, onboarding and training of new team members
Coaching staff on product knowledge, cocktail specs, service standards, upselling and compliance
Helping build a positive, accountable and professional team culture
Identifying strong performers and supporting progression within the business
Working alongside site leadership to ensure staffing levels are appropriate for trade and service needs
Compliance & Standards
Ensuring all bar operations are fully compliant with licensing laws, Challenge 25 procedures and company policies
Maintaining high standards of cleanliness, hygiene and due diligence throughout the bar operation
Training the team to work safely, responsibly and consistently in line with company procedures
Ensuring all staff understand and follow correct measures, specs and service steps
Supporting audit readiness and overall operational discipline
What Were Looking For
Previous experience in a Bar Manager, Senior Bar Manager or Assistant General Manager-level role with strong bar responsibility
Strong knowledge of wet stock control, ordering, stocktakes and GP management
Confident leader who can motivate, train and develop teams
Excellent understanding of drinks service, cocktail standards and bar organisation
Strong working knowledge of licensing law, Challenge 25 and responsible alcohol service
Calm and effective under pressure in a high-volume environment
Commercially aware, organised and detail-focused
Positive, hands-on and professional approach
Flexible to work evenings and weekends
