Salary: £32,445 + Service Charge (up to £600 per month)

The Opportunity

Hyatt Hotels Corporation seeks an experienced Senior Pastry Chef de Partie to join our Great Scotland Yard team. In this elevated role, you will lead the pastry section with confidence and creativity, working closely with the wider culinary team to deliver exceptional sweet experiences across our outlets. You’ll play a pivotal role in maintaining Hyatt’s reputation for culinary excellence while mentoring others and continuing your own professional growth.

As a Senior Pastry Chef de Partie, you will take ownership of the pastry kitchen, driving innovation, consistency, and quality. You’ll be expected to uphold the highest standards in pastry preparation, guide junior chefs, and contribute meaningfully to the development and execution of our dessert offerings.

* Pastry Section Leadership: Lead and oversee the pastry kitchen section, ensuring readiness, organisation, and excellence in production and service.

* Dessert & Bakery Execution: Prepare and present a wide range of desserts, breads, viennoiserie, and plated sweets to the highest standards of taste, texture, and presentation.

* Team Development: Mentor Demi Chefs and Commis Pasty Chefs, fostering a collaborative, supportive, and high-performing team culture.

* Inventory & Ordering: Manage pastry-specific stock levels, place orders, and ensure proper storage and rotation of ingredients to maintain freshness and minimise waste.

* Compliance & Hygiene: Uphold rigorous food safety and hygiene standards in line with HACCP and company policies, with particular attention to temperature-sensitive pastry production.

* Operational Efficiency: Maintain pastry equipment and workstations, ensuring smooth service and adherence to kitchen protocols.

* Innovation & Creativity: Lead contributions to seasonal dessert menus, afternoon tea offerings, and bespoke guest experiences such as celebration cakes and amenities.

Who You Are

You are a confident and skilled pastry professional who is experienced in leading a section, and eager to innovate and inspire.

Experience Required

* Proven experience in hotel pastry operations, with the ability to manage and lead a section independently

* Strong knowledge of advanced pastry techniques including laminated doughs, chocolate work, plated desserts, and bakery production

* Excellent communication and leadership skills to support and inspire junior pastry team members

* Ability to work under pressure in a fast-paced, multi-outlet environment

Experience Preferred

* Previous experience in a Senior Pastry Chef de Partie role within a luxury hotel or fine dining restaurant

* Proven work experience or exposure to London-based hotels, with knowledge of UK hospitality standards and local compliance (e.g., Food Hygiene Rating Scheme)

* Level 2 or higher certification is preferred, with strict adherence to health and safety regulations
